FWIW: one of my relatives went to nurse school with her daughter, the mother was about 40. My friend graduated with her BSN around 40, and my other friend - who is trying to get into nurse school is about 40. These women are just starting their new careers when IT workers would be considered washed up.

There really is a shortage of doctors, and it is by design. The AMA is a very powerful lobbying group, and they have ways of regulating the numbers of doctors that are licensed to work in the US. There is not way that foreign doctors will be able to flood into the US, the way that foreign STEM workers have.
There is also a shortage of nurses, but it may be for a different reason. The baby-boomers are hitting their 60s, and this is causing a substantial increase in the need for health care pros. And, many of the baby-boom health care workers are retiring (unlike STEM workers, they can afford it). The nurse schools simply do not have enough nurse instructors. It seems that nurses earn about twice as much as the instructors, so nurses rarely want to work as instructors. So yes, they are bringing in some offshore workers, but the field is hardly being flooded. As I understand it, most of the guest worker nurses are from the Philippines. An easy, and logical, solution t the problem would be to bring in guest workers to work as instructors, but they don't want to do that.
